Mediterranean Crockpot Chicken:

1 red onion, chopped
3 cloves garlic
3-4 chicken breasts
1/2 jar roasted red peppers
3T capers
1/2 cup Kalamata olives
1 dry italian dressing packet
juice of 1 lemon
olive oil
salt, pepper, garlic powder
Feta cheese

In bottom of slow cooker, add onion and garlic. Season chicken with salt, pepper, and garlic powder. Add to slow cooker. Add red peppers, capers, and olives. Whisk together dressing mix and lemon juice. Pour over chicken. Drizzle with olive oil. Cook until chicken is cooked through, 4 hours on high or 8 hours on low.

Serve with salad and feta cheese on top if desired.

Italian Beef Sandwiches

1 beef roast (chuck, arm or rump)
1 packet ranch dressing mix
1 packet Italian dressing mix
2 cups beef broth
1 jar pepperoncini
Rolls and provolone cheese

Add beef to slow cooker along with dressing mixes, broth, and peppers. Cook on low 8-10 hours. Shred beef and strain broth, separating fat. Add broth and shredded beef back to slow cooker. Serve on rolls with provolone.
